Baked Egg Bruschetta

2 cups cherry/grape tomatoes, chopped
2 tbsp. basil, chopped
1 tbsp. olive oil
Salt & Pepper
Fresh Mozzarella, sliced
Fresh bread, sliced
1/8 cup olive oil
Mmmm, imagine a bruschetta mixture with melted, stringy Mozzarella, topped off with a delicious egg. Mix it all together on toasted bread, and you’ve got the breakfast or brunch of a lifetime. De-lish!
Pre-heat oven to 325°.
Chop tomatoes and basil. Mix together with olive oil and a dash of salt and pepper. Add layer of tomato mixture to 4 small oven-safe ramekin dishes. Add thin slice of fresh Mozzarella, then second layer of the tomato mixture.
Add uncooked egg to top of each ramekin, adding a few more tomatoes, if desired.
Place each ramekin in the oven and cook until egg is set and cooked through, probably 25-35 minutes or more. If you want, you can wait to add the egg until other ingredients have warmed through. We added the eggs immediately and cooked.
Brush slices of bread with olive oil, and sprinkle with garlic powder and salt. Place on cookie sheet and bake for 10-15 minutes, or until bread begins to turn golden.
Serve baked dish with toasted bread. Enjoy!
